Right before classes ended, I wrote a summer bucket list last spring. Now that summer is basically over, despite the fact that I don’t start classes until the 25th, it is time to go over the summer bucket list and figure out what I did and did not do, and maybe I should put onto my Fall bucket list.

1. Paint a Chevron Print : Sadly, this is not happen. I never got around to painting, especially with my busy schedule. However, this is still on my fall bucket list.

2. Lose ten pounds in the month of May: I did not lose ten pounds in May, HOWEVER I did lose 12 pounds by the beginning of August. With that saying, I lost weight – that’s all that matters.

3. Meet new friends at Clipper this summer: This DEFINITELY happened. I met some of the greatest friends I have to this day at Clipper this summer. Some of whom I am planning on moving in with too!

4. Go to a UW party: This did not happen, instead I went to a lot of Clipper parties with my friends.

5. Go completely local and organic: For the most part I’ve done that, but this didn’t happen this summer. Food is hard to buy when you’re really poor.

6. Buy a new Coach purse: Instead of a Coach, I bought a Longchamp.

7. Buy a pair of Tory Burch Flats: Yeah…. Didn’t happen.

8. Completely redo my wardrobe: Now, I did a decent start of a wardrobe, but mine needs a lot of work after being in Pullman for two years. So fall is the perfect chance to get a start on that. Especially with all of the cute boutiques in the Seattle area.

9. Find the perfect skin regiment: I did do this! I found great cleanser, exfoliator, and a fantastic moisturizer that makes my skin look even better!

10. Meet someone unexpected: I met my unexpected people. The greatest thing that happened this summer was not by meeting someone, but knowing someone and allowing the unexpected to happen.

11. Learn something new about myself: I learned many new things about myself this summer, but the mot memorable was to trust my instincts – those gut instincts tend to be right and I need to listen to them.

12. Tan naturally: Obviously

13. Become best friends with one of my new roommates: Sadly, this did not happen, but I did become best friends and made myself some future roommates!

14. Go to Portland: I haven’t done this yet, but I am within the next couple weeks!

15. Find the perfect bathing suit: I’ve been so busy focusing on work and building up my closet and so forth that I haven’t found one! This is on my spring bucket list for sure!

16. Start bike riding: Yeah, didn’t do this.

17. Go to a yoga class: Ditto as above.

18. Read the New Yorker regularly: This I was able to do! I love this magazine, definitely a good bucket list item to have!

19. Go to a local concert: Not enough hours in the summer, but going on my fall bucket list for sure!

20. Find the perfect breakfast place in Seattle: This one I did without even thinking about the bucket list. For my mom’s birthday, we tried Oddfellows on Capitol Hill, near Eliot Bay Books. It is INCREDIBLE. Definitely my favorite breakfast spot.

21. Read “Ten Little Indians” by Sherman Alexie: It is in my nightstand and being read lately! I’ll make sure to tell ya how I like it!

22. Find the perfect desk for school: I am on the hunt as we speak!

23. Order all of the Batman the Animated Series on DVD: Yeah….not enough money for this.

24. Fall in love with grapefruit: This easily happened within the weeks of summer beginning.

25. Get comfortable with my personality and my body: This happened. I got comfortable with who I am as a person, realizing my strengths and weaknesses. With that, losing weight as helped my really become happy with my body, but also realizing that I have work to do yet.

26. Fall in love with healthy food: I haven’t eaten fast food in months – I win.

27. Start cooking: As much as I wanted this one to start, it didn’t. I have a great kitchen, I’m just never home. So with this fall coming up, I’m hoping to really be able to cook.

28. Begin living holistically: Meh. I really need to be better about taking vitamins.

29. Finish Grey’s Anatomy: I’m lame and didn’t even do this.

30. See more independent films: Thanks to one of my really good friends who loves independent films, this was made possible this summer.

So this was my summer! Keep an eye out for Fall’s Bucket List!

Easy Protein Breakfast: Eggs and Spinach

Breakfast is by far the most important meal of the day. It jumpstarts your metabolism to get your day started. Without breakfast, you metabolism will slow, which will cause a weight gain instead of weight loss. Not only that, but half way through your day, you will feel starved and sluggish.

Cereal, Greek yogurt, fruits, or protein bars are popular go to breakfasts when dieting. However, thanks to my roommate, Emi and her blog benchingbeauties.tumblr.com — I found a new way to eat breakfast and approach weight loss and fitness.

Start with organic free range eggs. I always grab two rather than one because it keeps me full longer. Crack both eggs into a skillet and let them cook. If you prefer, add a dash of pepper to them for a bit of flavor. Keep away from salt and any condiments or else it will contradict the healthy breakfast aspect. Next, grab a regular cereal bowl and add a loose layer of spinach to the bottom of the bow. Once the eggs are done, simply scoop them into the bowl on top of the spinach. Personally, I like to mixed it all together in pieces so it’s easier to eat.

Before, I hated eating healthy breakfasts. In Pullman, I always found a way to skip breakfast or go out for breakfast. I was never full when eating “healthy” breakfasts. However, this breakfast is my comfort go to breakfast especially on those rainy Seattle mornings.
